Salad Game Strong

Take your greens to another level.


Salads are a great summer go to meal!  

There is tons of seasonal summer produce available and salads provide an ideal way to beat the heat with their cool, crisp flavors with limited (or no) cooking. 

Tips to a better salad:

  • Make sure they fuel your body in a balanced way (so make sure they contain more than just greens!)
  • More colors are great, but there are plenty of fun things you can do with just green (peppers, kale, spinach, lentils, cucumbers...) so don't be afraid to try monotone combos!
  • Keep ingredients on had and ready to go. See my photo below? I love to keep jars of pre-cooked, pre-chopped ingredients in the fridge ready to pull handfuls from and add to my bowl of greens. 
  • Don't get bored! Keep your salads interesting by changing at least 1 ingredient every time you make it. Maybe a different nut, dressing, green, grain.... 

Salad Dressings can provide a healthful source of fat to your leafy greens which can assist in the absorption of fat soluble nutrients in that bowl of produce. Dressings can also provide a great source of flavor and variety to the same ol' mix of greens. Of course, dressing a salad can also add loads of excess calories, unnatural additives and added sugars. So how do you balance this?

My Favorite Summer Salad Recipe:

Per person:

  • 1 cup chopped kale 
  • 1 cup chopped spinach
  • ½ cup sliced strawberries
  • ½ cup sliced cooked beets ( Steam a whole beet for ~1 hr, cool, then cube!)
  • ½ cup sprouted quinoa
  • ¼ avocado
  • 6oz cooked salmon (use smoked or canned for a quick option!)
  • 1 handful walnuts
  • 1 handful microgreens (optional)
  • 1 tbsp sprouted watermelon seeds (Go Raw)

 

Combine all ingredients and toss with a balsamic vinaigrette.  Enjoy!
