35 minute Chicken Coconut Soup

I swear, all the recipes I post will not be instant pot recipes!  However, currently... I am enjoying my new present so bear with me. You might get annoyed if you lack this piece of equipment, but if you have one, you might l really enjoy these posts!  If you don't yet own one, please just do it already! I myself waited long enough and even if you enjoy cooking, this pot makes life easier without sacrificing healthy/nutrient rich cooking.

Ingredients:

+32 oz Chicken Broth
+ 6 Carrots, chopped
+ 1/4 cup Sun Dried Tomatoes, halved
+ 1/4 cup Red Bell Pepper
+ 1.5 pounds Chicken Thighs, boneless & skinless
+ 1 tbsp Turbinado Sugar
+ 1/2 tbsp Ginger
+ 6 Garlic Cloves
+ 1 can Light Coconut Milk
+ 1 tsp Salt
+ 1 tbsp Coconut Aminos
+ 1 tsp Cumin
+ 1/4 cup Basli, chiffonade
+ Extra basil & parsley for garnish

Yes, it seems like a long ingredient list, but here's where things get easy. Toss it all in the instant pot. Give everything one big stir. Pressure cook under the meat stew setting on low ~35 minutes. Once done, stir to break apart the chicken and serve over grain of choice. I used buckwheat ramen, and garnish.
