Almond Flour Muffins

Paleo ish. Guten Free. Vegan even! Yeap these little treats fit just about every style. But really, who cares about that!?  They are simple to toss together and taste great. They also are loaded with fiber, healthy fats, and protein to make a nourishing snack or post workout treat. 

Ingredients:

+ 1.5 cups Almond Flour/Meal
+ 1/2 cup Coconut Sugar
+ 1/2 cup Coconut Flour
+ 1/3 cup Shredded Coconut, unsweetened
+ 1/2 tsp Sea Salt
+ 1 tsp Cinnamon
+ 1/2 tsp Baking Powder
+ 2 scoops Vanilla Protein Powder (any)
+ 1 tsp Vanilla Extract
+ 1/3 cup Coconut Oil, melted
+ 1 cup Almond Milk
+ 1 Egg
+ 1/2 cup Nuts (almonds or walnuts...), chopped  
+ 1/2 cup Chocolate Chips (use vegan if needed)

Instructions:

Preheat oven to 350. Whisk together all the dry ingredients (except nuts + chips). Separately, whisk the egg with the milk + vanilla. Add the wet + dry and whisk well to combine. Let sit ~5 minutes. The almond flour will thicken slightly. Stir in the chocolate chips and nuts. Spoon the batter into muffin lined tins (Silicone works best for these!). Bake for ~20 minutes until golden. Let cool completely before removing from the tins.
