BBQ Tofu Bowl

This BBQ Tofu Bowl is sure to have you thinking about plant based eating differently. It's loaded with color, textures, and nutrients while being super tasty!
 

While I personally do not suggest adopting a completely plant based eating style, I do 100% advise including plant focused meals into your diet regularly. By occasionally skipping meat + cheese you have more room for nutrient + fiber rich, lower calorie ingredients like colorful veggies, seeds, and seeds. 

Ingredients:  

This makes roughly 4 portions. It's a great meal to make the entire batch and package up extra portions for the next days lunches! 

+ 1 Block Extra Firm Tofu (I use a pressed, sprouted block)
+ 1/4 cup BBQ Sauce (I use Hot Honey Chipotle -pictured- by RedDuck)
+ 6 cups Greens ( I use Kale + Spinach + Arugula)
+ 1 cup Kraut ( I used Cleveland Kraut's Roasted Garlic) 
+ 1 Butternut Squash, peeled + cubed
+ 1/2 cup Seeds ( I used GoRaw's Sprouted Simple mix) 
+ 1 tbsp Walnut Oil (or any oil)
+ 1 Avocado

Instructions:

Heat oven to 375. Toss the squash with oil and bake for 45 minutes, until tender and golden. Meanwhile, cube the tofu and toss with BBQ sauce. Place on a separate parchment lined tray and bake ~25 minutes, depending on how firm you like your tofu. While the squash + tofu bake, prep the rest of your ingredients: chop greens, slice avocado, get your bowls/tupperware out... okay there really isn't that much prep! :)  Assemble bowls by divvying up the greens into 4 portions, topping with a scoop of squash, tofu, and kraut. Add some avo slices and sprinkle with seeds.
