Campfire Ride Potato

On a long endurance activity, whole foods can be your best friend. They work to not only fuel your body, but preserve and promote overall health. Of course, there are good whole food options and bad ones when it comes to properly fueling your body for performance. 


'Campfire' Style Sweet Potato


Ingredients: (per serving)

+ 1 small Sweet Potato
+ Handful (~8) Mini Marshmallows
+ 2 Tbsp Almond Butter
+ Pinch Sea Salt
+2 Slices Bacon, cooked (excess fat removed) 

Instructions:

Preheat your oven to 400. Pierce the sweet potato with a knife or fork several times. Wrap tightly in foil. Bake ~45 minutes. Remove and peel open foil. When slightly cooled, cut open the potato, being careful not to slice all the way through (think stuffed bake potato style). Add in your nut butter, marshmallows, bacon and sprinkle of salt. Leave the potato unwrapped and bake another ~10 minutes until melty. Once cooled, wrap in foil to take along with you. Enjoy!
