DIY Vegan Coffee Creamer

This is a great DIY coffee creamer for adding more substance without processed junk.

Ingredients:

+ 1 can full fat Coconut Milk
+ 1 cup unsweetened coconut milk
+ 1 vanilla bean
+ ½ c pitted dates
+ Sprinkle of Cardamom

Instructions:

Cut the vanilla bean in half and scrape the seeds out. In a pot, combine the coconut milks and vanilla bean (whole bean and scraped seeds). Let simmer for about 30 minutes. Add the chopped dates and simmer another 30 minutes. Remove from heat. Remove vanilla bean, scraping once more to remove all flavor. Let cool slightly & stir in cardamom. Add mix to a blender and process until completely blended.  Use immediately or let completely cool and store in a jar in the fridge. ENJOY!
