Espresso Energy Bites

When I have a busy day or long ride, I like to pack my own fuel!! These no-bake, make ahead bites are the perfect thing to provide sustainable energy. 

 

Ingredients: 
+ 25 Pitted Dates
+ 1.5 cup Old Fashioned Oats
+ 2 tbsp Coconut Oil
+ 1 tbsp Maple Syrup
+ 2 tbsp Espresso Powder
+ 1/4 cup Cacao Nibs
+ 1 tsp Vanilla Extract
+ 1 tsp sea salt

 

Instructions:

Pit and chop the dates. Toss the dates, 1 cup of the oats, coconut oil, maple syrup, salt, and vanilla in the food processor. Pulse until almost smooth.  Remove and place the 'dough' in a bowl. Knead in the extra oats, espresso powder and cacao nibs. Once mixed in, roll the 'dough' into a log and wrap in parchment. Place in the refrigerator until firm 2+ hours. Remove, cut into rounds. Keep in the fridge or freezer in an airtight container. ENJOY!
