Ginger Snap Bites

Here's a little treat everyone will love. Seriously. Make them for your squad before spin class or make for your kiddos lunch box. Both options are sure to be a hit. These bites are whole food based, gluten free, (can be) vegan, and definitely are delicious. Oh yes, and they are beyond easy to make. 


Ingredients:

+ 1 bag GoRaw Gingersnap Cookies
+ 2 Bananas
+ 1/2 cup Chocolate Chips (vegan if desired/ dark/ milk... )
+ 1/2 tbsp Coconut Oil
+ Pinch Sea Salt

+ Optional Toppings: Bee Pollen/ Hemp Seeds/ Coconut/ Cacao Nibs
 

Instructions:

Slice your bananas into ~1/2" coins. Dump out the bag of gingersnaps and sandwich 1 banana slice btwn 2 'cookies'. Press firmly but gently to hold the sandwich in place. Melt the chocolate with the coconut oil and salt. Stir until smooth. Dip each sandwich in halfway. If desired, sprinkle the wet chocolate with any (or all) of the optional toppings. Place on prepared parchment sheet. Chill in the fridge or freezer until the chocolate hardens. Enjoy!
