Instant Pot: Goat Stew
Recently I received a housewarming gift of an Instant Pot. Now I have to admit... when this 'do-it-all' cooking pot came on the market, I ignored it. Typically, things that promise to do everything, do nothing well. I imagined a super charged crockpot and all meals lacking texture and flavor. But as more and more people jumped on the Instant Pot trend, it seemed to be more legit than I initially gave it credit for. My IG feed was full of pretty, colorful, healthyish recipes claiming to come from the pot.
Okay, maybe it was FOMO, but I wanted one!
The first thing I made was eggs. Hard boiled to perfection. The one thing I absolutely hate cooking old school.
The second thing would be a stew using goat stew meat picked up at the local farmers market. Originally, I planned on using my old crockpot for this task, letting the stew simmer away for hours while I went about my business. The Instant Pot promised to deliver a meat stew in roughly 35 minutes. 35 minutes?! Long story short, I made it, it was amazing, and here is the recipe.
+ 1 pound Stew Meat (I used Goat)
+ 1/2 cup Red Lentils
+ 1 cup Water
+ 16oz can Unsweetened Coconut Milk
+ 32oz can Diced Tomatoes
+ 2 Sweet Potatoes, chunked
+ 1 Russet Potato, chunked
+ 5 Garlic Cloves, chopped
+ 1/2 tbsp Turmeric
+ 1 tbsp Yellow Curry Powder
+ 1/4 cup Dehydrated Red Pepper chunks
+ 1/4 cup Dehydrated Carrot slices
+ 1/2 cup Dried Apricots, halved
+ 1 tsp Sea Salt
Cilantro & Pickled Red Onion (optional) to serve.
Combine everything in the Instant Pot. Mix well. Cook for 35 minutes under the Meat Stew setting.
Garnish & Serve!
