Greenness Salad

This super green salad is the perfect meal for cooling + energizing your body. 
 

 

Ingredients: 
+ 6 cups Mixed Greens ( I like a blend of torn kale, arugula, + Spinach )
+ 2 Scallions, sliced thin
+ 1/4 cup Sprouted Watermelon Seeds
+ 1/4 cup Sunflower Seeds, raw
+ 1 English Cucumber, sliced thin
+ 1 cup Onion Sprouts


 Suggested Dressing:
+ 1 avocado
+ 1 handful basil
+ 1 handful Parsley
+ 1/2 tsp Sea Salt
+ 1/2 tsp Cumin
+ 1 Lemon  (juice + zest)
+ 1 clove Garlic
+ 1/2 cup Water

 

Instructions:

Place all the dressing ingredients into a blender and blend until smooth. Add more water if needed for a thinner dressing. 
Mix all salad ingredients into two bowls.  ENJOY!
