Green Onion Tofu Bowl

This meal is packed with bold flavor, color and nutrients but contains nothing to weigh you down.
Ingredients: (serves 2)
1 small Butternut Squash, peeled & cubed
1 block Sprouted, Firm Tofu, cubed
2 cups Purple Brussels Sprouts, shaved
4 Green Onions, sliced
1 tbsp coconut oil
2 tbsp Harissa (I use Mina Harissa - Red/ Spicy)
2 tbsp Raw Pumpkin Seeds
Combine the squash, tofu, oil and harissa in a baking dish. Add a sprinkle of salt. Roast at 375 for ~35 minutes, stirring once or twice, until squash is tender and tofu is golden. Toss this with the remaining ingredients, add additional salt if desired and serve.
