Miso Potatoes

There's something irresistible about MISO. It's salty, savory and has that satisfying umami quality. I'm a fan. Try these potatoes and you will be too! Better yet, try the entire meal... 

INGREDIENTS: 

Potatoes:
+ 1 pound Potatoes, chunked (I used fingerling) 
+ 1 tbsp Apple Cider Vinegar
+ 1 tbsp Sesame Oil
+ 2 tbsp Olive Oil
+ 2 tbsp White Miso Paste
+ 1 tbsp Water
+ 1 tbsp Sesame Seeds

Salad:
+ 2 cups Kale
+ 2 tbsp chopped Brazil Nuts
+ 2 tbsp Scallion
+ 2 tbsp Dressing of choice
+ 2 slices uncured Bacon (I bake mine) 

 

INSTRUCTIONS:

Whisk together the vin, oils, miso and water. Toss with potatoes in a baking dish.  Sprinkle with the sesame seeds. Roast at 350 for roughly 25 minutes, depending on how you like them (I like mine a little crispy).  Remove from oven and devour alone, or in my suggested salad.
