Apple + Radish Slaw
I'm a slaw lover. There I said it.
I mean, what's not to love?? it's the perfect side dish!
Loads of crunchy veggies, herbs, spices tossed together in a creamy, sweet, tangy sauce... oh the sauce.. that's whats not to love about slaw.
Try this version for a simple, clean option. The sauce is still creamy, tangy and a touch sweet, but much more natural than the typical bottle!!
+ 1/2 cup Vegenaise
+ 1 tbsp Apple Cider Vinegar
+ 1/2 tsp Sea Salt
+ 1/2 tsp Chipotle Pepper Flakes (or more...)
+ 1/2 tsp Caraway Seeds
+ 1 tbsp Honey (or maple or agave)
+ 1 Granny Smith Apple
+ 1 Bunch (~6) Radish
+ 1 large handful Flat Leaf Parsley
Whisk all sauce ingredients together. Taste and adjust seasoning if needed. Set aside. Use a mandoline (or don't) to thinly and evenly slice the apple + radish. Chop the parsley. Toss all slaw ingredients with the sauce.
Use this slaw to top sandwiches or burgers... or try adding it to a bowl of roasted vegetables + chicken! YUM!!
