Sausage Rolls Taco Style
The flavors of an Italian sausage roll are so comforting and satisfying.... but that big chunky roll... not exactly the best way to get your carbs. So here's a little twist -> Put all the fillings in a corn tortilla and you've got yourself a more balanced, healthful meal. More flavorful too since the tasty fillings aren't lost in all that breadiness.
+ 1 smoked uncured sausage (try this kind) cut into diagonal thins.
+ 1 Red Bell Pepper, cut into thin strips
+ 1/2 Sweet Onion, cut into thin strips
+ 2 cloves Garlic, thinly sliced
+ 1/4 cup Olive Oil
+ Gnar Gnar Cleveland Kraut
+ 1/2 Peach, thinly sliced
+ 1 tsp Fennel Seed
+ 1/2 tsp coarse Black Pepper
+ Salt to taste
+ Corn Tortillas
Heat the oil in a large skillet over medium low. Add in the sausage, peppers, onion, garlic, fennel, pepper, and peach. Slowly sauté the mix over low heat until tender and lightly caramelized. Season with salt. Warm the tortillas and fill with the sautéd mix. Top with a big spoonful of kraut and start devouring.
