Sprouted Seed Salmon

Take a simple, nutritious ingredient and elevate it to create something stunning (+ delicious!). While organizing my pantry, I came across these Go Raw super simple sprouted seeds. I love these! I am always tossing them into granola, on salads, in cottage cheese, etc... but today I was feeling the winter blues and wanted something warm and special. 

Well I got to work and ended up with complete success, which I'm sharing with you!

Seeds can be way more than just an addition to a meal. Here, they act as a textural and flavor component in an unusual way. Make this salmon and serve it in a salad, like I did, or add some roasted broccoli and rice... anything works!


Sprouted Seed Baked Salmon


INGREDIENTS: (for 2 servings)


+ 12 ounces Salmon
+ 2 tbsp Sprouted Seed Mix
+ 1/2 tsp Sea Salt
+ 1 tbsp Ghee
+ 1/2 tsp Korean Chili Flakes (optional) 

 

INSTRUCTIONS:

SET OVEN AT 350. In a spice grinder or food processor, pulse the seeds and salt a few times until broke up. Place salmon on a large sheet of parchment paper.  Top the salmon with the seed mix and chili flakes. Add the ghee, do not worry about spreading the ghee as it will melt evenly and coat the fish once in the oven. Wrap the parchment around the fish and tuck the ends underneath to create a package. Bake for ~15 minutes. Remove from oven and  ENJOY!

 

Salad INGREDIENTS: (for 2 servings)


+ 4 cups Spinach
+ 1 cup Spiralized Radish
+ 1 cup shredded Cabbage
+ 1/4 cup Golden Raisins
+ 2 Carrots, thinly sliced
+ 1/2 cup Blueberries
+ 1 Scallion, sliced thinly
+ 1 tbsp Sprouted Seed Mix
+ 1 cup Sprouted Brown Rice, cooked
+ 4 tbsp Dressing of choice

Toss all ingredients together with your dressing. Divide into bowls. Top with the seed encrusted salmon. Enjoy!
