Maple Oat Granola

I love granola. It's delicious, easy to travel with and versatile. Many granolas are baked and well, I can't be trusted with that. Baking takes too long and I ALWAYS burn the oats/nuts. No thanks. 

Enter my stove top granola. It's the absolute best and easy to make.

Ingredients:

+ 3 cups Old Fashioned Oats
+ 1/4 cup Flax Seed
+ 4 tbsp Coconut Oil
+ 2 tbsp Chia Seeds
+ 1 cup Coconut Flakes
+ 1 cup Raw Cashews
+ 1 cup dried Mulberries
+ 4 tbsp Maple Syrup
+ 1 tsp Sea Salt
+ 1/2 tsp Cardamom
+ 1 tsp Ginger
+ 1/4 cup Powder of choice ( I tend to use Maca, Baobab & Lucuma but you can use protein or any other blend you like)

Instructions:

In a large skillet, toast the oats and coconut flakes until golden and fragrant. This happens quickly!! So stay by the stove, flipping your pan often. As soon as the color darkens, reduce heat and add in the coconut oil, flax, cashews, chia seeds, ginger, cardamom, and salt. Stir often until the mixture is coated with the oil. Up the heat and pour in the maple syrup. Stir to coat. Cook for ~1 minutes. Kill the heat, stir in the mulberries and powder. Let sit for ~15 minutes to firm up. Store in an airtight container on the counter.
