Sweet Potato Bars

Sometimes I go into the kitchen with intention & focus. These bars were not made during one of those times. I had a ripe banana and half a large sweet potato and thought, well lets just see what happens... Things got tossed into a mixing bowl and that went into the oven and all the while I crossed my fingers. Sometimes I get lucky. So lucky that I have to hurry up and take a photo, jot down the recipes before devouring the entire batch (okay, I did have help in devouring, but it did happen..).

Ingredients:

1 Ripe Banana
1/2 Sweet Potato (a generous cup-sih)
2 c Oats
1 c Oat Flour (or any flour)
1 Egg
2 tbsp Maple Syrup
1/2 tbsp Pumpkin Pie Seasoning
1 tsp Vanilla
1 tsp Baking Powder
1 tsp Salt

If your sweet potato isn't cooked, chop it and microwave (or bake but that takes a while...) until done. Let cool before using. 

Add the banana to a mixer and mix until mashed. Mix in the egg, maple, vanilla, seasoning and salt. Once combined, add in the flour and baking powder. Mix until a batter forms. Add in the oats and sweet potato. Mix enough to incorporate the oats and slightly mash the sweet potato (leaving most of the chunks intact. 

Pour into a brownie pan greased with coconut oil.

Bake at 350 for ~25 minutes. Let cool slightly, cut and devour (or wrap to take on rides of course).
