I do not love Chipotle.
There I said it. Sorry, please don't hate me. I swear this is a more flavorful version of a taco/burrito bowl that can be made at home.
+ 1/2 pound Chorizo Sausage
+ 2 cups cooked Brown Rice
+ 1/2 cup Cilantro
+ 1 cup Cherry Tomatoes, Halved
+ 1 cup Cucumber, seeded & diced
+ 2 Eggs
+ 1/4 cup Queso Crumbling Cheese
+ Cilantro Micro Greens (optional but awesome)
Sauté the chorizo over medium heat. This sausage is naturally oily and should not require additional cooking oil. Once it begins to brown, add in your rice. Stir together and cook an additional few minutes until rice is heated and meat is cooked through. Divide into two bowls. Cook the eggs in the same pan used for the sausage and rice. You can do the eggs any style you like! While they are cooking, divvy the other ingredients into your bowls. Top with the eggs and season. Enjoy!
