Trek Cup Sandwich
This power sandwich was inspired by my weekend at Trek Cyclocross Cup. It’s big and mighty, which is needed to refuel the intense effort out on the Trek course. It uses the samples of YumButter given out with racer’s bib numbers at registration. It uses a local Wisconson maple cheddar I picked up while browsing for race day snacks at a grocery store nearby the race. The idea was fun… the end product… AMAZING.
Ingredients: (per sandwich)
2 Slices Bread - I used Canyon Bakehouse 7-grain
1/2 tbsp (a squeeze) of YumButter Almond Adaptogen butter
2 oz (few slices) Ham
1/2 small Apple, sliced
Caramelized Onions (slowly sauté yellow onion slices in ghee)
Thick slice of maple cheddar
Handful of fresh Spinach
Stack the ingredients btwn your toasted bread and enjoy!
*tip - heat the onions and place them between the nut butter spread toast and cheddar for a gooey experience.
