Tuna Salad

Tuna salad is a staple in my house! Canned tuna is one of the most convenient sources of protein; shelf stable, healthy and ready to eat. I often make tuna salad while traveling, need a quick lunch or when I need to come home to fast dinner after an evening training session.  Forget the sloppy, mayo loaded tuna salads of your childhood, this one is all grown up.

Ingredients:

1 Can Tuna ( I eat either Wild Planet or Safe Catch - sustainability and mercury reasons!)
1 Scallion, sliced thin
1 carrot, shredded
2 tbsp Raisins
1 tbsp Sunflower Seeds
1/4 cup Golden Tahini Dressing

Add all ingredients to a bowl and mash together. Season with salt and pepper if desired. Scoop onto bread, seed crackers or a bed of organic greens.
