HEalthy fat, filling fiber, and Powerful Protein

This meal is simple to create but is unbeatable in its nutrition. The fiber rich lentils, protein packed egg, along with healthy avocado fatty acids will provide your body with the nutrients to rebuild and refuel. This is a great meal for post workout or off season clean fueling.

 


INGREDIENTS: for 2

+ 1 Avocado
+ 2 Eggs
+ 1/2 cup French Green Lentils, cooked
+ 1 tbsp Olive Oil
+ 1/2 cup Tomatoes, diced
+ Handful Microgreens, garnish
+ Salt
+ Pepper
+ Crushed Red Pepper Flakes (optional) 
 

Instructions:

Turn oven on to 400. Half the avocado. Remove the pit. Scoop out a spoonful of the inside of each half to create a larger hole. Save that scooped avo for a later sandwich spread! Toss the lentils and tomatoes with the olive oil. Divide into individual baking bowls. Place an avocado half in each, cut sit up. Crack an egg over the hole of each avocado. Its okay if some of the white runs out!! Season with salt, pepper and the chili flakes for a spicier variety. Bake for ~15 minutes until egg is cooked. Remove from oven, garnish with greens.
