Bamboo Rice Bowl


 

This recipe uses very simple seasoning to enhance the natural flavors instead of covering them up.

Ingredients: (for 2)

+ 1c Bamboo rice
+ 4 large sliced Carrots, color variations are best
+ 1 bunch Broccolini, stalks trimmed
+ 2 tbsp Coconut oil
+ 1 tbsp minced Garlic
+ 4 tbsp Tamari (gf soy sauce)
+ 4 Chicken thighs

Instructions:

To cook bamboo rice, look at my instructions on the 'Pantry' section posting about the ingredient. Grill the chicken thighs until cooked through. No extra seasons are needed with the protein. In a skillet, combine the coconut oil and tamari with the carrots. Saute on low heat to let the savory flavors develop, ~10min. Once the carrots are tender and slightly charred, add the garlic and broccolini. This step is very brief, you do not want to char the garlic or overly wilt the greens, ~2min. 
Divide the rice into two bowls, top each with vegetables and protein. Enjoy!
