Saladish...Slawish... Whatever, it's GOOD!


Bread + Veg = Y U M

You can still add bread to your diet and be healthy... Just use the bread as the addition, not the star.



INGREDIENTS: 

+ 4 cups Kale, chopped
+ 2 cups Purple Cabbage, thinly sliced
+ 4 slices Rye Bread ( I used this Gluten free option)
+ 2 apples, cored + thinly sliced
+ 1/4 cup Raw Sunflower Seeds
+ 1/4 cup Dried Cherries
+ Salt
+ Pepper

Dressing:

+ 1 cup Vegenaise
+ 1/4 cup Apple Cider Vinegar
+ 2 tbsp Honey
+ 2 tbsp Hot Water
+ Salt
+ Pepper
+ 1 tsp Caraway Seeds

INSTRUCTIONS:

For the dressing, whisk the hot water with the honey to thin it out. Whisk that into the remaining dressing ingredients. Pour the dressing onto the kale and gentle massage together. Toss that mix with the apple and cabbage.  Add in the sunflower seeds and cherries. Season with salt and pepper. At time of serving, toast your bread,chop into cubes and add to the salad.
