This sandwich provides simple carbs from the bread to get your energy levels up immediately. The fiber rich lentils and fatty avocado allow the energy supply to continue at a slow burn so you won't crash or bonk. 

 


Ingredients: 

+ 1/4 cup French Green Lentils, cooked
+ 1/2 Avocado
+ Pinch Salt
+ 1/2 tbsp Coarse Mustard
+ 2 slices Bread
+ Handful Herbs or Sprouts

 

Instructions:

Smash together the mustard, salt, avocado and lentils. Pile onto your bread. Top with the herbs and/or sprouts.
