Carrots + Herbs + Chickpeas
This recipe is amazing. Make it all the time.
Keep it simple and vegetarian or use my suggestions to create a heartier meal.
+ 4 Carrots, shaved
+ 2 cans Chickpeas, rinsed
+ 2 cups chopped fresh herbs (combination of dill, curly parsley, basil, flat leaf parsley, mint)
+ 6 Dates, pitted + chopped
+ 1/2 cup Almonds, roasted + chopped
+ 2 tbsp Honey
+ 2 tbsp White Balsamic
+ Juice of 1 Lemon
+ 2 tbsp Poppy Seeds
+ 1/2 cup Extra Virgin Olive Oil
+ 2 cups Roasted Chicken, shredded
+ 1 cup Havarti, diced
Whisk together the white balsamic, oil, honey, and lemon. If your honey is very hard, heat it for a few seconds to improve the viscosity. Toss in all other ingredients (and hearty additions if using). Let sit for 10-30 minutes at room temperature before serving.

Serve with basmati rice. This makes a large salad (party size) and is great the next day :)
