Cumin Yogurt Sauce
I'm a natural foodie... but some food still needs a little sauce....
This is an amplified yogurt. It works as a sauce, topping, and flavoring agent to many foods. The combination of citrus and toasty cumin is amazing. You just can't beat it. Sauces tend to be a huge downfall in diet quality. It is worth the extra few ingredients and minutes to make your own. Using this Icelandic yogurt gives you a pure, protein rich, almost sour base to add flavor to.
+ 6 oz Icelandic Yogurt, plain
+ Zest of 1/2 Orange
+ 1 tbsp cumin seeds
+ 1 Tbsp Orange Juice
+ 1 Tbsp Honey
+ 2 Tbsp Pine Nuts
Toast the cumin seeds and pine nuts over low heat ~2 minutes until fragrant and golden. This step is VITAL! Don't skip it or you'll loose all the flavor! Remove from heat and let cool. Meanwhile, whisk the honey, orange juice and yogurt until well combined. Stir in the pine nuts, cumin seeds and zest.
+ Make it Extra Special
Use this to top roasted vegetables or meat or even just to dip a baguette in!
