Make it. Pack it. Eat it on the go.
This is a wonderfully nutrient rich meal you can make ahead of time and nom on later. It has a nice balance of healthy fats, complex carbohydrates and fiber.
Ingredients: (for 2)
+ 1 pack Tofu, extra firm
+ 2 tbsp Coconut Aminos
+ 1/2 tsp Salt
+ 2 tbsp Coconut Oil
+ Dash of Liquid Smoke
+ 1 tbsp Apple Cider Vinegar
Heat the oven to 375 degrees. Melt the coconut oil. Whisk it together with the vinegar, smoke, and aminos. Cut the tofu into small cubes and pat try with a paper towel. Toss with the dressing and spread onto a baking tray. Bake until golden ~1 hour. I like mine extra firm and cook them longer. If you like tofu softer, cook it for less time.
