with an Orange dressing. Yay. 


Who doesn't love some brussels?!

This is definitely a salad for the off season. When you need a little feel good flavor (aka bacon) but want to stay lean and light. 


INGREDIENTS: For 4

+ 1/2 head Cauliflower
+ 4 cups Brussels, shaved
+ 1/2 cup Cranberries, dried
+ 1/2 cup Gorgonzola Cheese
+ 1/2 cup Pecans
+ 8 strips Bacon, not cured
+ 2 tbsp Olive Oil

Dressing:

+ 2 tbsp Olive Oil
+ Juice from 1 Orange
+ 2 tbsp Balsamic Vinegar
+ Salt + Pepper to taste

Instructions:

Chop your cauliflower. Toss it in oil and throw it into the oven at 350 degrees. Let it roast ~15 minutes until golden and tender. Meanwhile, cook your bacon and whisk together the dressing ingredients.  Add the dressing to the brussels and toss. Let that sit and soak until the cauliflower is done. Now toss everything together and divide into individual bowls.
