DIY Spiced Almond Milk

Sure, store bought is easy... but once you make your own, you'll buy it again.

Try this at home and you will see how simple the process is. The taste is impressive and pure.

Ingredients:

+ 1 cup Raw Almonds
+ 3 cups Water
+ 1 nut Milk Bag (or cheese cloth, but seriously just get the bag)
+ 1 Vanilla Bean
+ Handful Cardamom pods
+ 2 Star Anise
+ 1 Cinnamon Stick

Store bought almond milk likely has the following ingredients:

ALMONDMILK (FILTERED WATER, ALMONDS), EVAPORATED CANE JUICE, CALCIUM CARBONATE, SEA SALT, POTASSIUM CITRATE, CARRAGEENAN, SUNFLOWER LECITHIN, VITAMIN A PALMITATE, VITAMIN D2, D-ALPHA-TOCOPHEROL (NATURAL VITAMIN E).

When you make your own... Its just Almonds + Water + Spices.

The almonds will swell in size after soaking.

INGREDIENTS:

+ 1 cup Raw Almonds
+ 3 cups Water
+ 1 nut Milk Bag (or cheese cloth, but seriously just get the bag)
+ 1 Vanilla Bean
+ Handful Cardamom pods
+ 2 Star Anise
+ 1 Cinnamon Stick

Instructions:

Day 1:
Rinse the almonds. Place them in a large bowl or jar in ample water.

Day 2:
Dump the almonds into a colander. Rinse the almonds again. Place them, along with the 3 cups of water into a blender. Blend thoroughly.
This next step is easiest with two people. Have one person hold the milk bag over a large pot or other vessel. Pour the blended almond mixture into the bag, letting the liquid strain into your vessel.
Use some serious arm strength to squeeze the nut bag to get all the liquid out you possibly can.
Dump the almond pulp from the bag into a jar or container. Save in the refrigerator for future use.
Slice the vanilla beans in half lengthwise. Scrape the seeds and add them, along with the bean to the jar of milk. Add the star anise, cinnamon stick, and cardamon pods to the milk.

Day 3:
Yes, your milk needs to be put away until day 3.... This is to let the flavors infuse into the milk. But this is it! You've made it to the end!
You are now free to use your almond milk frequently! Store in the fridge.

Enjoy!
